What reminds us of home more than pancakes? Well, if you’re from Tehachapi, that would be apple pancakes, thank you very much! This is a great recipe, served with the syrup of your choice.

Paper Bag Apple Pie

This time I used maple syrup, but you might prefer another – or just some powdered sugar!

Ingredients & instructions

  • 1-1/4 cups sifted flour
  • 2-1/2 tsp baking powder
  • 2 Tbsp sugar
  • 1/4 tsp cinnamon
  • 3/4 tsp salt
  • 1 egg
  • 3/4  to 1-1/4 cups milk
  • 3 Tbsp butter or margarine, melted
  • 1 cup grated apples

Beat egg. Add milk and melted butter or margarine. Slowly add to sifted dry ingredients, mixing only until well-mixed. Cook on greased hot griddle. Serve with favorite syrup or topping.
